Just d/l'ed EyePoker, opens tables and gets HH's fine from iPoker,
but shouldn't the Hud appear after a while? (I'm using PT3.)
It currently only appears at tables that I sit down at.

You mean the PT3 HUD?
The PT3 HUD only works for tables you are sitting at.
